Farro Bowl with Roasted Carrots and Feta
Hello Dupa,

Well, the cold continues and we have spent most of our evenings indoors, stoking our wood stove and playing games.  Still, it has been a super busy time (I am finishing up my next cookbook) and I don't always have the time I want to prepare a healthy meal.  This is when I start making bowls.  The great thing about bowls is you can make many of the ingredients ahead and then put together a creative lunch or dinner in only a few minutes.   Today, I am sharing with you our recipe of the week: Farro Bowl with Roasted Carrots and Feta.  Until a few weeks ago, I had never eaten a lot of Farro, but Jess, our newest recipe develop has a lot of experience with it.  I have to say, this recipe is incredible!
